EZ Peel and Eat Shrimp

A great make ahead
Make either peel and eat or as standard cocktail shrimp.
Both are fabulous.
Ingredients:

Frozen Raw Shrimp EZ Peel,
Deveined, Tail-On Super Colossal
or for the no peel option without
3-4 Carrots
3-4 Celery Stalks
1/2 Cup Italian Parsley
2 Bay Leaves
1 Tsp. Dried Thyme
1 Onion
2-4 Garlic Cloves
Lemon
Defrost frozen shrimp.
Chop vegetables and quarter onion.
Leave garlic whole and toss with bay leaves
into a stockpot full of water.
Halve a lemon and add with thyme to the mix.
Bring to boil, add shrimp and cook for 2-3 mins until opaque. Turn off and let sit for 5 mins.
For no peel follow the same steps.
Let cool over ice.
Remove shrimp from the water and chill for 20 mins.

Serve chilled with cocktail sauce in a nice martini or margarita glass. Delicious!!
