Bel Piatto Chicken

Preheat grill to 450 degrees. Season chicken with 1 Tbsp olive oil. A combination of garlic powder, oregano, paprika, salt and pepper. Add the Stella Artois beer to the cone of a Bel Piatto Roaster. Slice the lemon, peppers, red onion, and squash and add to the bottom of the pan. Drizzle a little of garlic powder and olive oil on veggies. Grill the chicken for 30 mins. Decrease temperature to 350 degrees and continue to cook for 1 to 1 1/2 hours until it reaches an internal temperature of 165 degrees.

While the chicken cooks preheat an oven to 400 degrees. Add the sliced sweet potatoes to a aluminum foil lined cookie sheet adding cooking spray and topping with olive oil, salt, pepper, and some fresh parsley. Set aside and cook during the last 15 mins of the chicken cook time. Slice while chicken and plate as pictured and serve.
