30 Minute Citrus Salmon with Roasted Cauliflower and Brussel Sprouts in a White Wine Vinaigrette

Delicious. Clean. Simple.
A great weeknight or date night meal.
Fresh and delicious!

1-2 Salmon Fillets
1 Head Cauliflower
2 Cups Fresh Brussels Sprouts Halved
1-2 Cups Dry White Wine
1 Lemon
4-5 Sprigs Fresh Dill
2-4 Cloves Garlic
2 TBSP Olive Oil
Black Pepper
Kosher Salt

Prep time 12-15 mins. Cook Time 10-15 mins. Preheat oven to 400 degrees. Makes 2-4 Servings.

Start by seasoning the salmon with kosher salt and pepper.
Trim away the leaves from the cauliflower.
Trim the trunk.
Cut into florets. Set aside.
Smash and peel garlic.
Chop and dice garlic.
Dice the dill.
Zest the lemon.
Halve and juice the half.
Slice the other half for garnish. Set aside.
In a high heat skillet add olive oil about 1-2 Tablespoons.
Add the cauliflower.
Add the Brussels sprouts.
Toss in some of the salt.
Add pepper.
Sauté for 4-5 minutes per side. Set aside. Now time to sear the salmon.
Add more oil to the skillet.
Sear the salmon skin side up.
Top with garlic, lemon zest, and remaining dill.

Now add to a foil lined cookie sheet and bake for 7-9mins. Add the veggies to a separate clear casserole dish to and add to the bottom rack to finish cooking while the salmon bakes.
While the fish and vegetables bake finish the white wine reduction/ vinegarette.
Take the same skillet used to sear the salmon and veggies and add 1 TBSP olive oil, remaining garlic, remaining dill. Sauté for 1-2 mins.
Carefully add the white wine.
Reduce for 1-2 mins.
Add the vinaigrette to the reduction. Set aside.
Plate the lemon adding a sprig or two of dill for flare.
Add some veggies and top with a half or whole salmon fillet.
What a beautiful creation!
Top with the white wine reduced vinaigrette.
