Cranberry Gogi Berry Oatmeal Squares (Butter Free)

The perfect breakfast bar!

These were a hit at the most recent trade show and kids love them!
Light and delicious.

The best thing there’s absolutely no butter in this recipe.

2 1/2 Cups AP Flour
1 Cup Granulated Sugar or Sugar Substitute
2 Pkgs. Apple and Cinnamon Oatmeal
1 Cup LB Sugar
1 TBSP Light Karo Syrup
1 Tsp Cinnamon
1 Tsp Salt
1/2 Tsp Baking Powder
2 Organic Eggs
1 3.9 oz cup applesauce
1 TBSP Raw Honey
Dried Cranberry
Dried Goji Berries
Mixed Nut Blend w/
Almond (optional topper)

Preheat oven to 375 degrees.

Makes about 48 squares.

Start by adding some granulated sugar to a medium sized bowl.
Add in the light brown sugar.
Add the eggs.
Blend well.
Add the applesauce.

💡 I’ve been subbing egg and/ or butter in recipes with applesauce for years now it’s a great option for those with allergies.
Add honey about a TBSP.
In a separate bowl mix the dry ingredients.
Add in the oats.
Add dried goji berries.
We chose goji berries due to being a good source of vitamin A. Pomegranate could also work.
Add cranberries.
Blend well.
Add the wet to the dry ingredients. Blend well.

Place in the fridge for at least 10 mins to an hour.
Take some optional almond blend.
Grind with a pestle and mortar.
Use a TBSP and scoop dough onto a greased cookie sheet.
Top with nuts.

Freeze any remaining dough for up to 4 months.
Bake for 8-9 mins.
Once cooled for 3-5 mins.
Take a large mallet and
chop the cookies into squares.
So light and delicious.
