Simply Delicious Rotisserie Chicken Soup

Just in time for the colder months and ready in under an hour.

This recipe saves time and keeps the cold away.
With only a few ingredients in a Dutch oven, it’s simply delicious.
Serve with a side or two of rice, preferably basmati or Jasmine.
Use precooked rotisserie chicken
for a faster meal prep.
A great comfort or anytime meal!
The kiddos like it as well.

1 1/2 Cups Freshly Cooked & Shredded
Rotisserie Chicken
1 1/2 Cartons Chicken Broth
1 Cup Celery Chopped
5-6 Carrots (Peeled)
1 Vidalia or Yellow Onion
Fresh Parsley
Fresh Thyme
4-5 Garlic Cloves
Smash and peel garlic.
Loosely chop garlic.
Sauté 1-2 mins.
Toss in a few sprigs of Thyme.

Separate a few of the leaves and toss in.
Dice the onion.
Sauté onion 2-3 mins.
Toss in the chicken.
Add in the broth.
Add more thyme.
Chop celery including the leaves if preferred.
Toss it into the mix.
Chop carrots.
Chop some parsley. Add to the Dutch oven.
Just beautiful.
Season with salt & pepper to taste.
About 1-2 TSP not to exceed 1 TBSP.
Stir and cover Dutch oven.
Cook on medium for about 25 mins.

Vegetables should be tender but not overcooked.
Serve over a nice bed of rice or egg noodles if preferred.
