Classic Shrimp Fra Diavolo

A delicious classic!
It’s easier than you think.

1 1/2-2 Lbs. Jumbo Deveined Shrimp
1 28oz Can San Marzano Peeled Tomatoes
5-6 Cloves Garlic (3 diced, 2-3 whole)
1 TSP Dried Oregano
1 1/2 TSP Red Pepper Flakes
Angel Hair Pasta (Preferably De Cecco)
Dry White Wine
Olive Oil

Makes 4 Servings
Gather ingredients.
Start by hand crushing the tomatoes.

That’s right remove the rings, clean hands, and get crushing!
In a medium saucepan add some about 1-2 TBSP olive oil and heat to medium high.
Add the shrimp and sauté for 1-2 mins per side.
Add in the garlic.
Continue to sauté.
Set shrimp aside.
Now for the wine reduction.
Carefully pour in about 1 cup white wine.
The drier the better the flavor.

For the kid friendly version, omit the wine.
Reduce heat and add the oregano.
Stir to mix well.
Add salt and pepper.
Now for the red pepper flakes.
At this point you can remove the garlic if preferred, we keep it.

Add the crushed San Marzanos.
Let simmer 15 mins.
We like to use angel hair pasta which is ready in only minutes so you’re free to chop some basil, etc.
Boil water and prepare pasta according to instructions.
Grab pasta and cook to al dente.
Toss in the shrimp and basil at the end.
Plate as pictured or stir together.
