Crockpot Pulled Pork Three Ways

Try as a simple and tasty low-carb entree.
The perfect slow cooker food and great make ahead.
Great as pulled pork sliders.
Use this recipe to create something for everyone! This crockpot recipe is great for large or small gatherings. Can be portable by just transporting in a crockpot, refrigerate there or plug in right away and serve buffet style.

Great for church or work functions, game day, birthday celebrations, or anytime!

Try also as a great topper for nachos.

5-6 lb. Pork Roast
2 TBSP Cumin
2 TSP Garlic Powder
2 TSP Kosher Salt
2 TSP Brown Sugar
1-2 cups BBQ Sauce
1 Cup Water
Brioche Slider Rolls
Cooking Spray

Nacho Ingredients:

1 Can Refried Beans
1 Jar of Jalapeños
1 Pkg. 4 Cheese Mexican Shredded Cheese
1 Pkg. Sharp Cheddar Shredded Cheese
1 Packet Taco Seasoning
Cooking Spray

Sour Cream (Optional)
Add all dry ingredients to a bowl.
Mix together.
Use as a dry rub for the pork.
Make sure to season both sides.
Spray crockpot and add the seasoned roast.
Add 1 cup of water.
Slow cook on high for 4 hours or 8 hours on low.
Once pork has cooked it should be very tender.
Shred with two forks removing any remaining fat.
Now separate into a few different bowls.

One bowl for the brisket style serving with sauce on the side as a main dish with slaw (without the bun) for those watching their carb intake.

The second for the sliders, add the pork back to the crockpot for 10-15 mins on high with BBQ sauce. Either leave in the crockpot on warm until the event or add to a bowl and serve.

The third is used to top skillet nachos!
Reserve a small amount of liquid adding a little as needed to keep the pork moist while keeping warm during festivities, etc.
Keep enough for reheating leftovers, etc.
Add 1/3 of the pork back to the crockpot and add in your BBQ sauce.
Now take the brioche buns and slice in half.
Top with some of the pork.
Add the coleslaw.
Serve with some extra BBQ sauce on the side.
For the skillet nachos, preheat the oven to 350 degrees.
Spray a cast iron skillet with cooking spray.
Microwave the retried beans for 1-2 mins.
Add about 1 TBSP Taco Seasoning.
Build the layers, starting with the chips.
Top with seasoned refried beans.
Top with the last bowl of pulled pork (without BBQ Sauce)
Top with the sharp cheddar.
Now the 4 cheese.
Add the jalapeños.
Bake 10-15 mins until cheese is melted.
Dice some scallions.
Remove skillet nachos from oven and top with salsa and sour cream if preferred.
Just fabulous!! Dig in.
For any leftover pork just freeze with some reserved juice until ready to use again.

Try other options like chicken or beef!
