Chocolate Pecan Pie


1 16oz Bag Pecan Halves
Dark Karo Syrup
Semisweet Chocolate Morsels
1 Cup Granulated Sugar
3 Eggs
1 Cup Unsalted Butter
1 1/2 Sleeve Graham Crackers
1 Tsp. Vanilla Extract
1/2 Tsp Salt
Optional: Whipped Topping

Preheat Oven to 325 degrees
In a medium saucepan add Karo syrup and bring to a low simmer.
Add in the sugar.
Now the salt.
Stir until sugar slightly dissolves.
Grab the mixer.
Beat the eggs.
Once foamy. Set aside.
Slice the 1/2 of the unsalted butter and add to the saucepan mix.
Add in vanilla extract.
Just beautiful!
If pecans are halved, chop slightly.
Add to the saucepan mix.
Now carefully add in the chocolate morsels.
Looks great already!
Now incorporate your eggs.
Stir until well blended and set aside to cool.
Chop the Graham crackers or blend well in a food processor for smaller bits.

Melt the other half of the butter and add to the cracker mix.
It’s easiest to use a spoon to smash the Graham’s to the pie dish.
Bake in the oven for 5 mins to set the shell.
Remove and add in the pecan mixture.
Almost there.
Now top with more chopped pecans.
Bake at 325 degrees for 40 minutes.
Set aside to cool for at least an hour before serving. Not only is it fabulous looking, it’s totally delicious!
