Quick & Easy Greek Cucumber Salad

So fast to make and oh…the flavor!
Ingredients: 1 Large English Cucumber, 1/3 Red Onion, Cherry Tomatoes, 1 Cup Olive Oil, 1/4 Red Wine Vinegar, 1 Red Bell Pepper, 1 Yellow Bell Pepper, Kalamata Olives, 1 Pkg. Feta, 1 TSP Dijon Mustard, 1 TBSP Oregano, Garlic, Salt, Pepper.
Dice bell peppers.
Beautiful!
Chop the ends from the English Cucumber.
Slice lengthwise.
Slice into half moons as my son calls them.
Halve the cherry tomatoes.
Nice!
Slice the red onion.
Beautiful! Now let’s create the tasty vinaigrette dressing.
Add a cup of olive oil to a medium bowl.
Mince garlic. About 2-3 cloves.
Add garlic, 1/4 cup red wine vinegar, 1 cup olive oil, and 1 TSP Dijon mustard.
Add 1 TBSP oregano.
Whisk until well blended.
Add to a large bowl with the tomatoes, bell peppers , cucumber, and red onion.
Mix salad with wooden spoons to combine ingredients.
Top with feta and add the olives.
Cover and shake, shake, shake.

Serve immediately or refrigerate for at least an hour before serving and up to 8 hours prior to an event.
When ready to serve top with a few sprinkles of salt and pepper.

Fresh, delicious and super easy to make.
