Barramundi and Shrimp w/ Lemon Infused Green Bean Potato Medley

Fresh and Delicious.
A quick, easy, and healthy meal to serve anytime.
Ingredients:

4 Barramundi Filets, 1/2 lb Fresh Shrimp, Fresh or Frozen Green Beans, 3 Russet Potatoes (Skinned and cut into medallions), 1 Lemon, 2-3 Garlic Cloves Minced, Italian Parsley, Olive Oil, Kosher Salt, Pepper.

Slice the lemon.
Zest and juice lemon.
Season the potato medallions with salt and pepper.
Grab the shrimp.
Peel, devein, and butterfly the shrimp.
Saute the potatoes in about 2 TBSP of olive oil with 1/3 of the minced garlic.
Cook on medium high heat until slightly golden brown.
Nice! Now set aside.
Saute garlic for 1-2 minutes.
Add the green beans. Saute for 3 mins.
Top with 1/2 of the lemon zest and the lemon juice.
Toss the potatoes back in.
Top with parsley.

Set the medley aside.
Cook filets in a high heat skillet for 2-3 mins per side until golden brown.
Nice!

Set aside. Now for the shrimp.
In the same skillet as the fish was seared, sear and saute the shrimp for 1-2 mins per side.
Just beautiful!
Plate and serve!
