Low Calorie Collard Greens w/ Vegan Option

Delicious and easy!
Sometimes the simplest things taste the best!
A great option for meatless Monday’s.

1-2 Bundles Fresh Collard Greens (Loosely Chopped)
2 Cans Low Sodium Chicken Broth
(Vegetable Broth for Vegan)
1 Vidalia Onion
5-6 Garlic Cloves
1-2 Shallots
Crushed Red Pepper
Olive Oil
Kosher Salt
Peel onion, shallot and garlic.
Dice onion, shallot, and garlic.
In a stockpot heat up some olive oil, about 1-2 TBSP.
Sauté garlic, shallot and onion mixture until translucent. About 1-2 mins.
Add in both cans of broth.
Toss in 1-3 Tsp of Crushed Red Pepper.
For spicer finish add more.
Add greens to the stockpot.
Fold into the mixture and bring to a boil.
Cook covered for 35-45 mins.

Add some kosher salt.
Serve as a side dish with any meal or enjoy
as a happy green entree.

Super easy and delicious!
