1-2 Filet Mignon Scallops or Shrimp Parsley Garlic Lemon Unsalted Butter Olive Oil Kosher Salt Black Pepper
Preheat grill. Mince garlic and chop parsley.Zest and halve lemon.Juice 1/2 the lemon.Slice lemon for garnish.Top with some melted butter but don’t over do it. Season with salt and pepper. Grill steak until it reaches an internal temp of 140 degrees for medium rare. If you desire, cook longer for medium to well done.Wrap with foil and let the juice rest. Mix remaining butter with olive oil. Add in minced garlic, lemon zest, and parsley.Pour in the lemon juice.Pour garlic butter mixture over scallops.Blend well.Scallops are naturally salty so no need to add salt. Add some black pepper. Preheat skillet to high heat.Reduce to medium high heat and add scallops. The butter will aid in the searing process. Cook for 2-3 mins per side. For the shrimp skewers option, top with mixture and grill for 3-4 mins per side.Plate steak with juice from the foil. Add the scallops or shrimp. Serve.
