Easy Potato and Leek Soup w/ Grilled Cheese

Delicious!
Hearty and meatless option.

I’m totally a potato person and love, love, love, this as an option instead of the traditional tomato soup and grilled cheese although still a household fav.

A definite comfort food on a chilly day.
Potato & Leek Soup
Ingredients:

1 Bag Red Potatoes
1 Pkg. Potato Leek Soup Mix
6 cups Chicken Broth
Heavy Cream
Kosher Salt
Fresh Ground Black Pepper
Grilled Cheese
Ingredients:

Italian Loaf Sliced
Sharp All Natural Cheddar Cheese
Sliced (or Gouda)
1-3 TBSP Margarine or Unsalted Butter
(or Olive Oil for a Lighter option)
Chop potatoes leaving the skins on.
Bring the chicken broth to a boil.
Slowly add in seasoning mix.
Add the potatoes.
Bring back to a boil and lower
the heat to simmer for 30 minutes.
Take a hand mixer and break apart potatoes.
Try to keep some larger for better consistency.
Add in the heavy cream, about a cup.
Stir to blend.
Set aside for a few minutes while preparing the grilled cheese.
Spread butter, margarine, or olive oil on both sides.
Heat a griddle pan or skillet to medium high heat.
Place bread and build with cheese and top slice.
Grill for 3-5 minutes per side.

Plate and serve with the delicious soup topped
with salt and pepper to taste.
