Corvina Sea Bass w/Rock Crab Claws and Sauteed Rapini

Ingredients:

1 large Carvina Fillet
2 Rock Crab Clows Scored
1 pkg Tuscan Herb Finishing Butter
1 Roasted Garlic Bulb
1 Bunch Rapini
2 Tsp. Old. Bay Seasoning
Salt & Pepper
Trim the ends off oven roasted garlic.
Discard shells
(See previous recipe)
Season corvina with salt and pepper.
Bring a stock pot to a boil.
Blanch the Rapini for 3mins.
Sauté for 3-5 mins.
Add in some of the roasted garlic to taste.
Season claws with Old Bay.
Steam crabs for 7-8 minutes.
Season sea bass each side salt and pepper.
Sear 4-6 mins per side.
Plate seared sea bass with rapini and rock claws.

Heat the Tuscan Herb Finishing
butter over medium heat no more than 1-2 mins.

Serve as pictured above. Delicious!
