Easy Grilled Chicken Sandwiches w/ Make Ahead Nut Free Sun-Dried Tomato Pesto

Easy and so flavorful!
Great for those who have nut allergies…this pesto blend has no nuts and it’s packed with flavor!

2-4 Thin Chicken Breasts
2-4 Artisan Buns
Fresh Basil
2-3 Tbsp.
Grated Parmesan Romano
2-3 Tbsp. Sun-Dried Tomatoes
Olive Oil
1 Tsp. Crushed Red Pepper Flakes
Sea Salt
Start by making the pesto.
Smash garlic and peel.

Pour in all dry ingredients.

This can be made ahead and refrigerated until ready to use.
Pulse for 1-2 mins.
Slowly add in olive oil.
It’s ready once it gets to this consistency.
Refrigerate until chicken sandwiches are ready.
Season and cook chicken in
a medium high heat skillet 3-5 mins per side.
In a griddle or skillet spray with cooking spray. Taste buns for 2 mins.
Chicken should reach an internal temperature
of at least 165 degrees. Fahrenheit.
Build sandwiches as pictured.
There’s no need to add anything
all the flavor you need is in the pesto.

Topping with some more Parmesan Romano cheese and parsley for flair is a nice touch!

Refrigerate remaining pesto as a topper for more sandwiches or on pasta. Delicious!
So moist and flavorful!
