Quick Sesame Ginger Salmon and Vegetable Kabobs

My husband and I met and married in Okinawa,
Japan many years ago.

The food, the flavors have been
a custom of our family’s ever since.
We love this meal and treat it like a date night meal many times over…Enjoy!

Ingredients:

Fresh Salmon (Cubed)
4-6 Portabella or Cremini Mushrooms
1 Red Bellpepper
1/2 Large Red Onion
1 Small Zucchini
3-4 Tbsp. Sesame Ginger Sauce
1 Cup Jasmine Rice
Diced Green Onion (Optional)
Minced Fresh Ginger (Optional)
Tamari Sauce (Optional)

Makes 2-4 Servings.
Gather ingredients.
Chop vegetables as pictured.
Skewer vegetables and salmon.
Reserve half the sauce for later.
Brush kabobs with Sesame Ginger sauce starting with the vegetables ending with the salmon.
Grill Salmon and Vegetables for 10-15 mins.
Cook the jasmine rice according to package. Remove from heat.
Add some chopped green onion.
Plate and serve with a side (Minced Ginger, Tamari or Soy sauce.)
Grab some chopsticks and enjoy!
