Five Layer Lasagna w/ Sweet Italian Sausage and Spinach

Ingredients:

9 oz. Flat Lasagna Noodles (or Homemade Pasta)
5 Sweet Italian Sausage Links
1 Bag Fresh Spinach
1 28oz. can San Marzano Tomatoes
15 oz. Ricotta (Whole Milk or Skim)
24 oz. Marinara (Pictured below)
1 Package Mozzarella
(Fresh is Best or Shredded)
5-6 Garlic Cloves
1 Egg
Basil
Parsley
Oregano
Grated Parmesan

Makes 8-10 Servings.
Preheat Oven to 375 degrees.
Chop oregano. Dice and halve garlic.
In a medium saucepan sauté olive oil and half the garlic for 1-2 mins.
Open sausage casings by slicing lengthwise.
Discard casing.
Continue until all casings are removed and you have all sausage exposed and ready to cook.
Cook on medium heat 5-7 minutes until browned.
Add in San Marzanos.
Toss in oregano and start breaking down the tomatoes with spoon edge or a hand mixer.
Toss in 24. oz of your favorite marinara.

Continue to stir to incorporate.
Cook for another 10 mins.
Set aside to cool.
In a separate bowl combine Ricotta,
Parsley, 1/2 the Parmesan, and Egg.
Add in Salt and Pepper.
Sauté Spinach first by adding in
Olive Oil and Garlic for 1-2 mins.

For those who want the classic version,
just omit the spinach.
Slowly add in Spinach. Cook for 3-5 mins.
Set aside.
If using fresh pasta, roll adding more flour as needed. Dough should not be sticky. When the right consistency is reached run through the pasta maker on the lasagna setting.
Awesome! Run it through twice.
Place the fresh pasta on a pasta stand and allow to dry out for at least 8- 10 minutes.
Move sauce to a bowl and let cool.
Now build the lasagna, layer by layer.
Layer 1. Start with sauce mixture on the bottom of a 9×13 Casserole Dish. Aluminum pans are great when making with fresh homemade pasta. If the lasagna sheets are too long, cut to fit the pan.
Layer 2. Add a layer of the pasta.
Spread the ricotta mixture over it ensuring to leave at least half for another layer. Top with sautéed Spinach and Fresh Basil.
Layer 3. Add the next layer of pasta.
Top with Sauce and Mozzarella.
Layer 4. Add another layer of pasta.
Spread more Ricotta, Spinach, and Basil.
Layer 5. Add in next layer of Pasta, Sauce, Mozzarella, topped with more Parmesan. Remember to save some for the topper.
Cover with foil.
Place in 375 degree oven and cook for 30 minutes.
During the last five minutes of bake time,
remove the foil and cook an additional 5 mins.
Mmmm…A Lasagna made with love!

Now be patient and let it sit for
10-15 mins for a firm and delicious finish.
The longer you let it sit the better it gets.

Top with remaining Parsley and Parmesan.
Plate and serve.
