Garlic Lemon Shrimp w/ Asparagus


1/2- 1 Lb Shrimp
1 Bundle Asparagus
1 Lemon
(Half Zest, Half Juiced)
Olive Oil
Rinse and chop away asparagus ends.
Loosely Chop Parsley.
Chop Garlic.
Lay asparagus flat on foil.
Drizzle with olive oil, salt and pepper.
Make oven packet by folding over lengthwise then rolling in the sides stopping at the tops and ends as pictured.

Bake for 8 mins.

While asparagus bakes, prep and sauté shrimp.
Season with pepper.
Some prefer to remove the tails and add salt but for this recipe it’s not needed.

Add the zest, lemon juice, garlic, and parsley to bring the flavor…
the tails are a flair so keep them if you like!

Sauté garlic for 30 seconds, add shrimp for 2-3 mins per side.

Top with remaining parsley and lemon zest.
Plate and Serve.
