Spinach Red Pepper Mini Omelette

Gather Ingredients. Red pepper to taste. Preheat oven to 350.
Chop spinach.
Whisk egg and cheese together.
Add spinach and red pepper.
Bake for 12-14 minutes
Omelettes will plump up like a soufflé when they’re done. Sprinkle with salt if desired.
Plate and serve. Simple, quick, and delicious!
