Seafood Linguini w/ Sautéed Asparagus


1 lb. Fresh Shrimp
1 Package Mussels (Frozen w/ garlic and herbs)
4 – 6 oz Linguini
1 Bundle Asparagus
3-4 Garlic Cloves
1 Lemon
4 Tbsp Olive Oil
Salt, Pepper
I Tbsp Unsalted Butter
Makes: 6-8 servings
Gather ingredients. Start the pasta to boil for the instructed time.
Chop away ends of Asparagus. Discard.
Mince garlic, half for seafood blend and half for asparagus sauté. Grab the lemon and halve. Zest the half and slice the other half quarter for garnish later.
Zest lemon
Season shrimp with salt and pepper.
Sauté 2-3 mins per side. Add juice from lemon.
Set aside and sauté mussels package with sauce blend. Add sautéed shrimp to the mix.
Drain al dente pasta.
Set aside 1/2 cup starchy water. Incorporate during the final 2-3 minutes after pasta is added to seafood mixture. Now for the asparagus.
Sauté the remaining garlic.
Skillet sauté Asparagus. Add lemon zest over pasta. Serve asparagus alongside the pasta dish… yummy!
Garnish with remaining lemon wedges. Parmesan and red pepper to taste.
