Tasty Italian Panini w/ Homemade Chips

Ingredients:

Panini:

Pane Di Casa Bread slices or sliced artisan bread of your choice

Hot Capocolla

Black Forest Ham

Salami

Provolone

Red onion, thinly sliced

Pepperoncini

Spinach (Optional)

Stack you’re ingredients and red onion. Feel free to add greens such as spinach, or tomato but be careful to not incorporate the core to reduce sogginess. Pepperoncini can be added in during cooking for a deeper flavor. Finish in a panini maker, olive oil grill pan, or skillet. I use a panini maker.

Homemade chips.

2 russet potatoes, thinly sliced with peeler or mandolin. I leave the skins on.

1 tsp. Chili powder

1 tsp. Cumin

1 tsp. Salt

1 cup olive oil.

Heat olive oil in a deep skillet. I use a wok. Slice potatoes thinly and then add to a ziplock and shake. Lightly fry for 2-5 minutes until crisp. Set aside on either wax paper or cloth napkin.

Add a little mayo with olive oil if desired but it’s so tasty it doesn’t need it.
