A family favorite salmon recipe! My son says the potatoes “look like yummy bananas” and they taste fabulous…
Ingredients:
2-4 Salmon Filets
1 bundle Broccolini
3 potatoes
3 Tbsp Brown Sugar
3 Tbsp Dijon Mustard
3 gloves garlic
Olive oil
Salt
Pepper
2 tsp Rosemary
Preheat oven to 450. Bring 8 cups of water to a boil. Rinse and prep Broccolini, set aside. Peel potatoes and cut into long wedges. Place in an oven safe dish preferably lined with foil. Sprinkle with 2 tsp. olive oil, salt, pepper, and diced rosemary. Mix the brown sugar and mustard together until blended. Smash garlic and roughly cut. Season salmon with salt and pepper. Place potatoes in the oven for 10 mins. Pan sear salmon 2-4 min. skin side up, remove from pan and place in sheet pan (foil is easier). Brush with Dijon mixture. Add salmon for the remaining 15-20 mins depending on thickness.
When the salmon goes in toss the remaining salt into the pot. Boil the Broccolini for 1-2 mins. Blanch by removing and placing in a bowl of ice. Remove and sauté garlic in an olive oil skillet for 1-2 mins. Add the Broccolini, cover and cook for 5 mins.
Remove Salmon, Potatoes, and Broccolini … have a TASTE…Mmm so moist and delicious!!! better yet have a plate with your delicious sides.
