Lamb Chops

Delicious and Easy!

Mildly seasoned… cooked to perfection

Prep: 15 minutes

Bake: 1 hour

4 lamb chops, 1/2 inch thick

4 large carrots

8 small potatoes

1 teaspoon fresh rosemary

1 teaspoon thyme

Salt and pepper to taste

Preheat Oven to 350. Trim excess fat from chops. Season chops on both sides with salt and pepper. Bake for 40 minutes on lower rack. Loosely dice rosemary, thyme, and sprinkle over vegetables. Halve potatoes, peel and dice carrots to 2 inch long and 1/2 wide 20 minutes into lamb bake time. Add veggies to oven and bake for the remainder.

For wine enthusiasts, serve with a Pinot Noir or Merlot.
